If you think yours came out too dry, you might need either more liquid so it cooks even longer or less liquid so it cooks faster. It will be cooked but not probably not browned.
Break the meat into hots and crisp it in a skillet. Also, you said you used two lemons and 3 limes. The citrus helps tenderize the meat, so that might have had an effect, too. I see, thank you for explaining more! The lemon juice looked about right but definitely was low on lime juice.
